Description	:	Carol Schabot, 77, of Yankton, SD formerly of Mitchell, died Monday, November 1, 2021, at Sister James Care Center in Yankton. Funeral services will be at 11:30 AM Thursday, November 4, at St. John Catholic Church in Plankinton. Burial will be at Mizpah Cemetery in Plankinton. Arrangements by Bittner Funeral Chapel. Carol Ann Schabot was born near Stickney on December 30th, 1943 and was the 3rd of 8 children born to John and Dorothy Schroeder. Carol and Donald Schabot were married on October 13th, 1961, and had two daughters, Deidre and Doralea, and later adopted Jocinda. They were married for 58 years before Don died in March 2020. Carol spent her entire life taking care of other people. Besides her own children, she took in any child that needed someone, whether just a few hours or lifelong surrogate parents. She never said no to someone in need. She had many creative talents, sewing, leatherworking, quilting, and knitting among them. Carol took great joy in making highly unusual things like western shirts with one short sleeve and one long, upside-down pockets etc., and her knitting, which could be described as "Picasso knitting." She loved reusing scraps of other things to make new, such as her many scrap quilts which have kept people warm for years. Her devotion to the Catholic Church from birth was a driving factor for her in everything she did. Carol's legacy is that she did a lot with very little, and many lives were the better for it. Carol's death lets her rejoin her husband, Donald, a brother, Bill, and many other important people in her life. She leaves behind as she would say "a whole herd" of people who will miss her very much. - Bittner Funeral Chapel
