Description	:	Henri Lavallee is a descendant of a long line of French Chef's dating back over 400 years. During the Revolutionary War, one of those forebears, Pierre Lavallee, was the private Chef for British General John Burgoyne when "Gentleman Johnny" (as General Burgoyne was called) crossed the pond to America. Born Edward Henry Lavallee on 15 April 1920 in Berlin, Coos, New Hampshire, Henri was one of 16 children born to Alfred Lavallee and Nellie Ferrari Lavallee. Back in the barrel stave and homemade hickory days, Henry was a skier. Henry worked as a lumberjack and used to run bobsleds on one of the old logging roads. With a house full of siblings, Henri went off to work with his father at the early age of 13. He began his cooking career cooking on an old coal stove at Breton Woods Hotel where his father, Alfred, was head chef. Breton Woods Hotel is now part of the Mount Washington Luxury Resort and is located in the Bretton Woods, an area within Carroll, New Hampshire. He went on to graduate in 1939 from the La Cuisine Chef School in Bern, Switzerland. During his 40 plus years as a Chef, Henri enjoyed traveling or moving around and thus amassed quite an impressive list of references. Besides his early days at Breton Woods, Henri was Chef in The Orvis Inn in Manchester, Vermont; Yellow Aster in Lenox, Massachusetts; Hillsboro Club in Pompano Beach, Florida; Lodge at Smugglers Notch in Stowe, Vermont; Gunstock in Laconia, New Hampshire; Highlander in Mt. Snow, Vermont; Equinox in Manchester, Vermont; Hartford Golf Club and Wampanoag Golf Club both in Hartford, Connecticut; Golden Fox in Colonie, New York, Farragut Hotel in Rye, New York, Pittsfield Country Club in Pittsfield, Massachusetts and Blantyre Castle in Lenox, Massachusetts. And so it has gone over the years. His last stop was in 1973 when Jim Kelly, owner of Brodie Mountain Ski Resort in New Ashford, Massachusetts, hired Henri to be Chef at the Blarney Room at Brodie Mountain. At that time in his life, Henri was no longer able to ski, bobsled or chop trees but could still entertain the crowds with his happy, outgoing personality. That first New Years Eve, Henri had a floor show to entertain the diners and revelers of the Blarney Room. The singing Chef Henri sang " Georgia Brown" and other favorite songs in French and with such enthusiasm that he brought the house down. It was at this last stop that Henri met, fell in love with and married Mary LaHaie Bigelow.
