Burial will be in Zion Lutheran Cemetery. Visitation will be Thursday from 4-7 pm at the funeral home. Eunice died Saturday, June 21, 2014 at Evergreens of Fargo. Eunice F. Ehley, daughter of Edwin and Hulda (Zaiser) Ehley was born June 2, 1932. She grew up on the family homestead of her grandparents, Heinrich and Rosina Ehley, attending a one room school house and Emmaus Lutheran Church. In 1945 the Ehley family moved to Ashley. She attended Ashley High School, graduating with the class of 1951. Eunice was united in marriage to Ruben Helfenstein on June 10, 1951 in Zion Lutheran Church in Ashley. They made their home on the Christ Wolf family homestead in Long Lake, SD until the fall of 1954 when they moved to the Ehley homestead northeast of Ashley, where they would reside for the next 37 years. In 1991 they moved to the Ehley home in Ashley upon their retirement. In 2007, Eunice and Ruben moved to Bethany Homes in Fargo. Ruben died October 30, 2008 and Eunice moved to Evergreens of Fargo in 2011. Eunice treasured the time growing up on the family homestead and being able to raise her children there, sharing the family history. She worked as a bookkeeper at Ashley Livestock for several years. Eunice held a strong faith in God and passed on that love and faith to her children. Eunice loved animals, children, gardening, reading (especially history), crocheting, embroidery, playing cards, traveling and entertaining. Eunice and Ruben were active members of the community. Eunice served at President of WELCA and the Eagle's Auxiliary. They loved to travel, taking annual trips with life long friends, making numerous trips abroad, several cruises, and traveling to 49 states. Eunice loved to plan and organize trips for the Sunshine Club as well as entertaining the travelers with games and stories along the way. Most treasured was the time spent with their family.
