Description	:	Eunice M. (Pachunka) Shotkoski, 93, of Fullerton, died peacefully with her family by her side on Saturday, August 14, 2021, of stroke complications following COVID-19 infection. Mass of Christian Burial will be at 11 a.m. Friday, August 20, 2021, at St. Peter's Catholic Church in Fullerton with Reverend William L'Heureux officiating. Burial will follow at St. Peter's Catholic Cemetery in Fullerton. A rosary service will be at 9:30 a.m. Friday, August 20th at the church followed by a visitation from 10-11 a.m. prior to the service. Eunice was born September 9, 1927 to Louis and Rose (Stanczyk) Pachunka on the family farm in southeast Nance County. Eunice was a life-long Fullerton resident, graduating from Fullerton High School in 1945. She was devoted to her husband of 63 years, Dennis, their three daughters, and their farming business. She led a busy life, rising at dawn to help with Holstein dairy and Angus beef cattle, raising chickens, and selling cases of eggs as a commodity. She nurtured a prolific garden both on the farm and at her city home and enjoyed growing the family's produce (sweet corn/string beans/tomatoes, making grape jelly from her grapevines, and baking apple crisp from the old apple tree). She eagerly awaited each growing season to enjoy the blooms of gladioli and dahlias and watched songbirds (wrens and cardinals) contribute new bird families to nature. Eunice was a planner and was always ready to harvest nature's bounty. Eunice was a member of St. Ann's Altar Society and taught CCD classes. She actively supported the local Nance County "Southsiders" 4-H group and worked at the Fullerton Nursing Home. Eunice's baking skills became legendary and her cinnamon rolls, sour cream raisin pies, and chocolate chip cookies were highly sought after. She fed scores of people from her farmhouse kitchen; however, nothing gave her more joy than cooking and spending time with her husband, children, and grandchildren. Eunice's life was one of service, humbly done. While in secondary school, Eunice met Dennis as he transported her and classmates to a Fullerton boarding house for the school week. They married in November 1945 and set about their busy farm life on land located seven miles east of Fullerton. Eunice and Dennis built a retirement home in Fullerton during the early 1980s, all the while continuing the farming operation. Eunice remained in this home after her husband's death in 2008 and continued to enjoy her garden, songbirds, and frequent visitors. After a fall in 2018, Eunice lived at Valley View Assisted Living until March 2021. Even during rehabilitation stints, she blossomed under adverse conditions, becoming a popular resident who was a friend to all. Eunice continued to closely track the lives of her family and community acquaintances up through her passing. She remains in their thoughts and is now, no doubt, back to work with Dennis at her side. She is already missed, loved even more by all who knew her. She is survived by her children, Denene Collura of Lincoln, Diane (Ron) Allen of Scarborough, ME, and Deborah (Roger) Nesbitt of Grand Island; seven grandchildren, Chey (Ann) Collura of Neenah, WI, Colin (Deborah) Allen of Australia, Ross (Cara) Nesbitt of Omaha, Colby (Amy) Collura of Minneapolis, MN, Courtenay (Ryan) Worcester of Hingham, MA, Emily (Joseph) Sturm of Omaha, and Brenton (Janelle) Nesbitt of Omaha; six great-grandchildren, Maxwell Nesbitt, Milo Allen, Harrison Nesbitt, Jameson Sturm, Elise Worcester, and Sadie Collura; nephews, Tim Nathan of Hastings and Greg (Pam) Nathan of Lincoln; niece, Susan (Scott) Zaruba of Norfolk; and cousins, Sandi Caradori of Lincoln and Charlotte (John) Chavonek of Elkhorn. She is preceded in death by her husband, Dennis E. Shotkoski; parents, Louis and Rose Pachunka, sister, Rose Marie Nathan; and brother-in-law, Rupert Nathan.
