Description	:	Funeral services were held on Saturday, Oct. 11, 2003 for Evelyn Simon. Evelyn Simon, 69, died peacefully on Oct. 8, 2003 at Sioux Valley Foundation Hospice Cottage. Forty days earlier she learned she had pancreatic cancer. Although her illness was swift, she maintained a positive attitude and insisted on the same from others. Although her illness was swift, she maintained a positive attitude and insisted on the same from others. She was born Evelyn Mae Grayson on Feb. 3, 1934, to Roy V. Grayson and Johanna Stroman Grayson. She and younger brother, Roy, were raised on the family farm near Worthing. She attended Sunnyside Country School and Canton High School, from which she was graduated in 1952. She then went on to Methodist-Kahler School of Nursing in Rochester, MN. Evy made several life long friends in nursing school, and graduated in 1955. She returned home to Worthing and started her brief nursing career in Canton. Evelyn married James W. Simon on Jun. 1, 1956, after the two were introduced by their parents. The couple honeymooned in Colorado, and even spent a day taking their nieces to an amusement park. Upon their returning to Lennox, Jim joined his father in the William F. Simon & Son Insurance Agency, and he and Evelyn later operated Simon Insurance and Simon Tax Service together. Evelyn and Jim raised four children and five grandchildren: Lorie Callison of Mesa, AZ; Michael Simon and his wife, Sally of Sioux Falls; Cherie Mace and her husband, Bill, of Kennewick, WA; and Daniel Simon and his wife, Marg, of Lennox; her brother, Roy Grayson and his wife, Diane, of Worthing.
