Description	:	Leatrice "Lea" Joy Knopik, 93, of Fullerton, joined her angels on Easter Sunday, April 4, 2021, at Boone County Health Center in Albion. Mass of Christian Burial will be at 10:30 a.m. Thursday, April 8, 2021, at St. Peter's Catholic Church in Fullerton with Reverend David Fulton and Deacon John Small officiating. Masks are recommended. Burial will follow at St. Peter's Catholic Cemetery in Fullerton. Lea was born July 5, 1927 to Joe and Esther (Brigland) Horacek at Cotesfield, NE. In 1932, Lea moved with her parents to the North Star area, where she grew up and attended District 62 and Fullerton High School. After, she worked at Mac's Coffee Shop in Grand Island, and Fullerton's Clara's Cafe, and Eddie's Cafe, where she met Eddie Knopik. They were married on January 31, 1948 in Omaha, NE. They then moved to Cedar Rapids, where they ran Eddie's Cafe for two years. In 1951, they moved back to the North Star area, where they farmed and raised their seven children. In 1976, they moved into Fullerton and they became part owners of the Loup River Inn. She was a member of the St. Peter's Catholic Church, St. Ann's Altar Society, and a lifetime member of the American Legion Auxiliary. Lea loved "cooking"! There was never a time when family or friends would show up at her door and greeted with a hug and a counter full of food! She loved baking and going through recipe books to try something new for the grandkids. She really loved gardening and yard work. She also loved playing cards, bingo, marbles, and going to the casinos with her girls….and she usually won at all of them! She thoroughly enjoyed being Mrs. Claus during the "Old Fashioned Christmas" in Fullerton. She was the most giving and affectionate person to her family and to anyone that crossed her path. She is survived by her three sons, Jim (Carolyn) Knopik of Belgrade, Larry (Margareta) Knopik of Kansas City, KS, and Kenny (Jana) Knopik of Palmer; three daughters, Deb (Britt) Blackwell of Fullerton, Jody (Pat) Hogan of Fullerton, and Kathy (Doug) Dolan of North Platte; and 16 grandchildren, 26 great-grandchildren, and four great-great grandchildren. She was so very proud of each and every one of them and she loved them all dearly. She is preceded in death by her husband, Eddie Knopik; son, Brother Rick Knopik; grandson, Riley Dolan; her parents, Joe and Esther Horacek; brother, Dayle Horacek; and sisters, Evelyn Trotter, Phyliss Dolan, and Jeanne Hinrich.
